Fonio Smoothie Bowl

Fonio is an African heritage grain that's considered to be one of the oldest crops in the world. It is a gluten-free whole grain that's a great source of amino acids, B vitamins, and fiber. It cooks easily and can be consumed either sweet or savory. You can get it in health food stores or online. 

If you don't have any, an oatmeal base is a great substitute for this recipe.

Fonio Smoothie Bowl
Ingredients for smoothie bowl:
Fonio - 1/2 cup
Papaya - 1 (cubed)
Pumpkin seeds - a handful
Coconut cream - 1/4 cup
Chia seeds - a handful
Goji berries - a handful
Honey - to taste (optional)
Method of preparing the smoothie bowl:
  1. In a small saucepan, add 1 cup of water, the fonio, and a pinch of salt. Bring to a boil. Once boiling, turn down the heat to a minimum and cover with a lid. Stir often until all the water has absorbed - about 4-5 minutes.
  2. Transfer the cooked fonio to a serving bowl and mix in the coconut cream, little by little. You can add more if needed for a creamy texture.
  3. Top the fonio base with fruit and seeds, drizzle with honey, and enjoy!
