Hasselback Sweet Potato

Wintertime has me craving some delicious meals. Here's a side I often love to prepare - Hasselback Maple Pecan Sweet Potatoes. A fantastic recipe that uses ingredients like cinnamon, maple, nuts, and of course, sweet potatoes. The name Hasselback come from the Swedish Hasselbacken restaurant, which introduced this recipe back in the 40s.

Ingredients for Hasselback Maple Pecan Sweet Potato:
Oil - 1 tbsp.
Unsalted butter - 2 tbsp. (melted)
Cinnamon - 1 tsp. (ground)
Pecans - 1/4 cup (chopped)
Maple syrup - 1/4 cup
Vanilla Extract - 1/2 tsp.
Salt and Pepper - as needed
Method of preparing the Hasselback Maple Pecan Sweet Potato:
  1. Preheat the oven to 425°F. 
  2. Slice the sweet potatoes every 1/4 inch along the length of the sweet potato, lowering your knife 1/3 of the way through.
  3. Brush the sweet potatoes with vegetable oil and place them in a small baking dish. Season with salt and pepper to taste.
  4. Bake for 30 to 40 minutes, or until soft. Remove the sweet potatoes from the oven and increase the temperature to 450°F. 
  5. In a small bowl, combine the melted butter, ground cinnamon, chopped pecans, maple syrup, vanilla extract, and 1/2 tsp salt.
  6. Spoon the mixture over and in between the baked sweet potato slices pushing the pecan pieces in between each slice. Bake for an additional 8 to 10 minutes.
