Stuffed French Toast
Ingredients for Stuffed French Toast:
Sandwich bread - 12 slices
Cream cheese - 6 tbsp. (softened)
Jam - 6 tbsp.
Eggs - 6
Milk - 1 cup
Ground cinnamon - 2 tsp.
Vanilla Extract - 1 tsp.
Unsalted butter - 6 tbsp.
Method of preparing the Stuffed French Toast:
  1. Heat a nonstick skillet or griddle over medium heat (350°F/ 175°C for the griddle).
  2. Spread about 1 tbsp of cream cheese and 1 tbsp of jam in the middle of 6 slices of bread, leaving the edges dry. Cover each slice with an empty slice of bread, then place the 6 sandwiches in the freezer for a few minutes to stiffen up the filling and prevent it from spilling out as it is cooked.
  3. In a shallow dish, whisk together the eggs, milk, cinnamon, and vanilla extract. Dip each side of one sandwich into the egg mixture.
  4. Melt 1 tbsp of butter in the skillet and place the french toast to cook. When the edges of the toast turn golden brown, flip the toast and cook until golden on the other side - around 3-4 minutes on each side.
  5. Repeat the same steps with the rest of the toast.
  6. Serve warm with more jam on the side. If you like your french toast extra sweet, you can also dust the toast with powdered sugar.
Chef's Tip:
Use any jam you have on hand. Strawberry jam, blueberry jam, apricot jam, and raspberry jam all work very well in this recipe.
